One Cake Mix, 1 Quart of Neopolitan Ice Cream, 5 Egg Whites, 2/3 cup of white suger
Preparation Instructions
Bake cake mix as instructed on box in a 9 x 13 pan. When complete- Remove from pan and place on a wooden cutting board or a cookie sheet. Trim cake to be one inch larger on all three sides then your brick of ice cream. Keep ice cream in freezing compartment till just ready to use. Make Meringue: Beat 5 egg whites till soft peaks form. Gradually add 2/3 cup of sugar, beating to stiff peaks. Center the brick of ice cream on the cake. (a strip of paper under cake will help you slip dessert onto paper later). Spread meringue over ice cream and cake, sealing carefully to edges of cake. (Make sure there are no holes) Sprinkle with granulated sugar. Bake in extremely hot oven (500*) until golden brown- about 3 minutes. Remove from oven and serve. (If desired, you can assemble the Alaska hours prior and freeze then brown just before serving)
